
Breakfast
consists of kamut or fresh Tuscan bread with pecorino cheese, fresh tomatoes,
or butter and jam, yogurt, muesli, eggs and tea or coffee. Lunch and dinner
will be catered by Sandro and Gabriela Ciofi who run the Antica Salumeria
Salvini in the village of Costafabbri 700 meters below the house. The
Salumeria is our local shop, but also part of a long tradition of excellence
in Siena. Gabriella and Sandro sell the salumi - cold cuts - that Sandro makes
himself from old Signor Salvini’s ancient recipes, organic pecorino
cheeses made in the Val d’Orcia (the valley you see in the view from
the house), and local produce. Every meal is pulled together by Sandro and
Gabriella using these local products and the fruits and vegetables that are
currently in season.
A typical summer lunch lovingly prepared by our chefs:
· Melons topped with cinta senese, a special prosciutto handmade
by Sandro from a race of indigenous black pigs which are raised in the chestnut
forests of the Castello di Spannocchia organic farm south of Siena
· Homemade fettucine noddles topped with butter, aged pecorino,
pepper and nutmeg
· Pincimonio or raw vegetables dipped in olive oil from the
Villa Madreselva trees
· Cantucci (hard almond biscuits typical of Siena) and Vin
Santo (local sherry)
· Wines from the Poggio Salvi vineyards
